Cinnamon Coconut Rice

This is a comforting dish (hey, anything that is based on the most popular starch across the globe a.k.a “Rice” has to be comforting!) that brings together the flavors of island into your kitchen. The sweet warmth of cinnamon combined with the nutty creaminess of coconut makes ordinary rice absolutely heavenly.

What You Need
1 Cup of Basmati rice or any long grain rice, washed and drained.
1 Tablespoon of oil
1 Stick of Cinnamon
1 tablespoon of freshly grated coconut (thawed to room temp if using frozen).
2 Cups of water
1 tablespoon of coconut cream
Salt to taste

How to make
• Heat oil on medium heat in a pan (use a pan that has well fitted lid)
• Add the cinnamon stick and sauté it till it doubles in size.
• Add the freshly grated coconut and sauté till slightly golden in color.
• Add the rice followed by the coconut cream. Give a quick stir.
• Add the water and salt.
• Cover the pan with a lid and allow it to cook till the rice is soft and cooked.
